Hänsel & Gretel predominantly use raw materials from Austria, because of the high quality and to keep the transportation as short as possible.
We produce vegetarian as well as vegan products. The vegan products are 100% herbal only, i.e. no eggs, no butter and no honey are used. The packaging, as well, fulfils the requirements of a vegan product.
We prefer to use Demeter raw materials. As not all raw materials are available in Demeter quality the remaining ingredients are in organic quality. We do not use any additives, flavouring or colouring.
Due to this the Hänsel & Gretel organic production is more strict than the European Union regulation, which permits up to 5 percent non-organic raw materials (Commission Regulation (EC) No 889/2008 of 5 September 2008 laying down detailed rules for the implementation of Council Regulation (EC) No 834/2007 on organic production and labelling of organic products with regard to organic production, labelling and control).


Some information about the raw materials used by Hänsel & Gretel:

Demeter vegetable mix: nine different vegetables : carrots, leek, green beans, cauliflower, peas, kohlrabi, celery, broccoli, leaf celery.

Demeter spinach: after harvesting the spinach is washed thoroughly, blanched, cut and shock frozen to obtain the vitamins and minerals.

Demeter wholemeal breadcrumbs: produced in a Demeter bakery, in which the owner himself is monitoring the production. Due to our huge demand the breadcrumbs are produced especially for Hänsel & Gretel.

Demeter wheat and spelt wholemeal flour: the flour comes from a small mill in Austria. No additives are used to improve the baking quality (like e.g. ascorbic acid or amylase).

Demeter apples: after harvesting the apples are washed thoroughly, pealed and used immediately in the production process to obtain as much of the vitamins and minerals as possible.

Demeter pumpkins: the Hokkaido pumpkins are carefully selected; the fully ripped, aromatic pumpkins are cut and used immediately in the production.

Organic cheese: the cheese comes from a small cheese dairy in the Austrian mountains; produced without silage; the cheese mixture includes spicy alpine cheese and Emmentaler.

Organic eggs: free-range eggs; the chicken feed includes no chemical or synthetic fertilizer or crop protection; the chicken feed is predominantly self-produced.

Organic seitan: Seitan is derived from the protein portion of wheat. It substitutes meat in many recipes and was developed by vegetarian monks in China. The production of seitan the traditional way is time consuming. Flour is mixed with water to form a dough. The dough is then kneaded and rinsed under running water to remove the wheat starch. It can be flavoured in a variety of ways, e.g. simmered in a traditional broth of soy sauce or tamari, ginger, or garlic.

Non-iodised sea salt: sea salt contains sodium-chloride as well as minor portions of other minerals, like e.g. Magnesium salts, Calcium salts, Potassium (Kalium) salts, Manganese salts, etc. The sea salt is without any additives, not refined and not bleached.

Organic plum jam: freshly harvested aromatic plums are slowly boiled down to the traditional Austrian plum jam; no additives, no sugar and no antidegradants are used.

Organic raw cane sugar: In a sugar mill, sugarcane is washed, chopped, and shredded by revolving knives. The shredded cane is repeatedly mixed with water and crushed between rollers; the syrup is further concentrated and upon cooling, sugar crystallizes out of the syrup. A centrifuge is used to separate the sugar from the remaining liquid, or molasses. Raw sugar has a yellow to brown colour. For the production of white sugar a much longer refining process is necessary. Thus Hänsel & Gretel uses brown organic raw cane sugar.

Organic tofu: the Hänsel & Gretel tofu is produced out of organic soybeans without preservations, artificial flavours, etc. The production of tofu from soy milk is similar to the production of cheese from milk. Tofu is made by coagulating soy milk and pressing the resulting curds. The curds are processed differently depending on the form of tofu that is being manufactured. For soft silken tofu the soy milk is curdled directly in the tofu's selling package. For standard firm Asian tofu, the soy curd is cut and strained of excess liquid using cheese cloth or muslin and then lightly pressed to produce a soft cake.

Organic potato crisps: produced from organic potatoes; the production is based on a special cooking procedure and careful drying to obtain the vitamins and minerals in the best possible way. There is no emulsifier used.
